I didn’t have my usual salad (easy to make and full of good stuff) on Monday, the 16th. Gotta have some variety.

The vegetables (braised brussel sprouts; snap peas and carrots) were cooked by HEB. I avoid cooking vegetables for some reason. Boring. Then I had some delicious, tasty pork tenderloin (still working on the huge amount I got on sale at HEB for $1.99 a pound) covered with a mixture of crumbled gorgonzola, minced Italian parsley, and sauteed, minced red onion and garlic. The pork was cooked in olive oil (still working on using up the Filippo Berio), of course; and I sprinkled the pork with course, fresh-cracked black pepper while it was cooking. Delicious…especially the pork tenderloin…
